Thai Chicken Fried Rice

Thai Chicken Fried Rice is a Thai food recipe that is popular all over Thailand. The ingredients vary over different regions so its great to experiment and see where your taste buds take you. The Thai's tend go heavy on the fish sauce so this dish has been tamed down a little. Easiest if cooked in a Wok with a Wok Spatula

| Imperial | Ingredients | Metric | | 3.5oz | Chicken (Chopped into bite sliced pieces) | 100g | | 10oz | Thai Jasmine Rice | 280g | | 2 | Eggs | 2 | | 4 tbsn | Soy Seasoning Sauce (from a Thai shop) | 60ml | | 1 tbsn | Chicken stock powder | 15ml | | 1 tspn | Fish sauce optional (if you like it add more) | 5ml | | 1 tspn | Sugar | 15ml | | 4 | Spring onions cut and slice two onions into one inch lengths | 4 | | Half | Red pepper Cut and sliced thinly into one inch lengths | 0.5 | | 3 tbsn | Vegetable Oil | 45ml | | Half | Lemon or Lime whichever you prefer | Half |
Cooking Instructions - Boil the rice as per the packet instructions
- Drain the rice and set to one side
- Heat the Wok on a medium heat and add 1 tbsn of vegetable oil make sure the oil is evenly spread
- When the oil is hot add chicken and stir 3-4 minutes until well cooked then put aside in bowl
- Heat the Wok again on a medium heat and add another 1 tbsn of vegetable oil make sure the oil is evenly spread
- When the oil is hot add the eggs and stir for 2-3 minutes making sure the eggs are scrambled
- Add the rice, soy sauce, fish sauce, sugar, chicken stock then stir well for 2 minutes on a medium heat
- Add the cooked chicken, peppers and chopped spring onions then stir fry for one minute
- Finally
serve with spring onion or cucumber, sliced lemon or lime
