Fried Thai Noodles
Preparation – 30 Minutes Cooking Time – 15 Minutes Serves – 2-3 People
Fried Thai Noodles is probably the most popular dish in Thailand, but you can tame down the chillies if you prefer it without the spice. Easiest if cooked in a Wok with a Wok Spatula

Fried Thai Noodles Recipe
| Imperial | Ingredients | Metric | | 8oz | Dried rice sticks - approx 5mm or 0.25 inches wide (soak the rice sticks for 30 minutes whilst preparing the other ingredients) | 250g | | 10oz | Raw peeled prawns | 325g | | 3 | Small onions cut into rings | 3 | | 3 | Chopped spring onions (cut into half to one inch lengths) | 3 | | 4oz | Bean sprouts – rinsed and drained | 125g | | 4 | Finely cut fresh chillies | 4 | | 3 | Eggs – beaten in a bowl that will take heat | 3 | | 4 tbsp | Oil | 60ml | | 1 tbsp | Tamarind | 15ml | | 3 tbsp | Soy sauce | 45ml | | 4 tbsp | Chicken stock | 60ml |
Cooking Instructions - Drain the noodles after soaking
- Mix the tamarind with 4 tbsp of boiling water in mixing bowl until the pulp is dissolved
- Strain the tamarind until you have 2 tbsp of tamarind sauce
- Add 3 tbsp of fish sauce
- Add 1 tbsp sugar
- squeeze half a lime in the mix and stir well.
- Boil the prawns for 2 minutes and drain well, let them change colour but don’t over cook them
- Heat the Wok on a medium heat and add the oil – make sure the oil is evenly spread
- When the oil is hot add the eggs and stir for 1-2 minutes making sure the eggs are scrambled
- Empty the eggs in a separate bowl and set aside
- Pour the remaining oil into the Wok and increase the heat to medium high
- Add the onions and stir fry them for 3-4 minutes until they start to go brown
- Add the garlic, chillies and prawns and stir fry for 30 seconds with the wok spatula
- Increase the heat to high then add the soy sauce, chicken stock, rice sticks and bean sprouts then stir fry for about 2-3 minutes
- Finally… serve on a warmed plate, sprinkle the chopped spring onions over your meal and enjoy.
