Thai Pork Mince Salad

Thai Pork Mince Salad (Laab-moo) is an easy Thailand food snack that can be prepared and cooked in only 20 minutes, even quicker if you are organised! Eat with any type of rice. This Thai Food Recipe is Easier if Cooked in a Medium Sized Pot

| Imperial | Ingredients | Metric | | 7oz | Minced pork | 200g | | 2 tbsn | Roasted rice powder | 30ml | | 1 tbsn | Red chilli powder | 15ml | | 3 | Shallots | 3 | | 1 tbsn | Lime Juice | 15ml | | 1 | Mint leaves to your taste (small teacup at most) | 1 | | 1 tbsn | Fish Sauce | 15ml |
Cooking Instructions - If you want to cook your own rice powder, heat a wok on a medium heat and add 3 tbsp of rice and stir until the colour changes to brown then grind it with a ‘mortar and pestle’ (The Thai way) or just use a food blender until it become powder.
- Boil the minced pork for 3-4 minutes until well cooked and drain (You might want to keep some of the juice for adding to the mix later).
- Add half the roasted rice powder, chilli powder, lime juice, fish sauce, small red onions and mix well for 1 minute minutes then taste it.
- If you are happy with the flavours add the other half or adjust the quantities to suit your taste and cook for 2 minutes.
- Add some mint leaves and cook for a further 1 minute.
- Finally… serve with rice and cucumber or cabbage then enjoy.
